A few weeks ago I watched a well known documentary called Earthlings (find it on YouTube). It shocked me to my core. It made me really think about the foods I’m consuming and it made me feel guilty everytime I ate an animal product. So, recently I decided to make the move from carnivore to vegan. It wasn’t an easy decision as after almost 40 years of consuming animal products it is a huge lifestyle change. I’m just a week in so far but I haven’t had any urgings for animal products YET.
I’m well aware that it will get more difficult. One nice change though is it is making me more aware of what is in the products I consume and it is also forcing me to actually cook. With a busy job and a sometimes hectic life it is all too easy to take shortcuts in my diet. I’m also hoping cutting out animal products will help me lose some weight. I’m not obese by any measure but i would like to shift the stubborn weight that has gathered around my midriff. With Greece in two months I am aiming to get bikini ready by then. So with this in mind here is one dish that I’ve recently discovered and am loving. With approx 300 calories per serving it is also great for my weight loss aims.
There are some days when you just want to throw something tasty together quickly. This dish is one that I usually make after work when I don’t want to slave away for ages in the kitchen. It is a great choice for carnivores too!
You can vary it by adding extra veg or mixing nutritional yeast into it to make a creamy sauce.
Like all good recipes it can be a bit of trial and error. Add whatever you like to the sauce. I find aubergine is great but also courgette, sweet potato or even peas.
